September starts next week. Seriously, where did the summer go? What I love about fall is sweater weather, pumpkin spice lattes at Starbucks and fall veggies. Fall is my go-to for hot soups, crisp salads and body warming side dishes. As I begin changing my workout clothes and recipes from summer to fall I’m getting excited for all the vegetables that are now in season. We have a tendency to rely on comfort food when the temps drop so here are some healthy recipes to add to your wedding day diet using vegetables that are at their tastiness peak.
Good beets are small, firm and still have their greens attached. They go well with roasted vegetables or can be sliced up into a salad.

Buy them from a bag or grab a stalk. These are one of the foods that you might have hated as a child but grew on you as an adult.
A signature fall vegetable, these are perfect for roasting, baking, using in a salad dressing or in desserts. Buy a whole one or use a can.
Green beans are the most tender and sweetest in the fall. Whether you buy them in a bag, grow them yourself or get them from a pan they’ll taste amazing.
Spinach is one of the best foods you can add to your diet. Fuel up by adding it to salad, pasta or soups.

Obviously these are just a few vegetables in season but look out for roasting vegetables and baking to bring out their flavors. And remember, things are best in moderation.
